My fiance just got back from Iraq this past year, and I want to do something really special for him for his birthday to let him know how much I appreciate his service to our country. Does anyone know of a place where I could have his name put on a veterans' wall or something of that sort? I am very proud of my veteran. :)

There are many veteran organization that sell bricks which have the veterans name and service on them. Check with your local VFV, American Legion and local veterans service office. Many veterans memorials are have this type of project . Bricks may cost anywhere from $25 up to hundreds depending upon the size.
